Coconut Pancakes
Given our restrictive diets, my kids sometimes miss good old pancakes on a Saturday morning. With a little trial and error, this creation was born!
These have gotten raving reviews from my kiddos! A mom win!
Ingredients
1 cup coconut flour
3 eggs (pasture raised, organic)
1/2 cup goat kefir (or plain, whole kefir)
3 tbsp olive oil
1 tsp vanilla
2 tsp apple cider vinegar
1 tsp ground psyllium husk
1 tsp baking soda
Coconut oil for pan (to avoid sticking)
Manuka honey, syrup or berries (for toppings)
Step 1
Mix vinegar and baking soda together, then add to other ingredients and mix well. Add water to desired consistency.
Step 2
Spoon onto a warm, oiled pan on stovetop.
Step 3
Cook on a LOW temperature (these pancakes tend to be thick and puffy and won't cook through if cooked on a higher temperature...have patience!). Flip once they are cooked most of the way through. They tend to firm up as they cook.
Step 4
Top with manuka honey, syrup or berries. Enjoy!
